{ Sunday Cookies }

Here's a recipe for Sunday cookies or as Pat would say growing up..."hunday tookies". Every sunday his mom would make a batch after church. Okay I am not that kinda mom so my kids and Pat only get them on occasion. They're yummy and easy to make.



Sunday Cookies

1 stick of butter

2 cups sugar

1/2 cup milk

3 Tbsp cocoa

Mix together in a saucepan and boil for one minute. Remove from heat and then...

Add:

3/4 cup peanut butter

1 tsp vanilla

3 cups oats (I like old fashioned)

Spoon onto cookie sheets and allow to cool.

Here are a few tips...you must boil them for exactly one minute {time it!}. I start timing them as soon as I see bubbles in the center of the pan. If you boil them too long they're crumbly but if too short they never get hard. My mother-in-law told me they work without cocoa too. I have not tried them that way yet. I always seem to have an endless supply on hand. She also told me that almond extract works if your out of vanilla. Growing up with 5 boys in the house, she said you make them with whatever you have on hand. And don't forget someone always gets to lick the spoon!
